During some recent vacation time we decided to explore Kythera, Greece. Kythera is one of the most idyllic and humble islands in the Mediterranean sea. It is also the home to Harry Tzortzopoulos — organic farmer, owner of Astarti olive oils and private culinary tour guide — we have come to meet. We are so lucky enough to spend five hours with Harry exploring the northern most tip of the island Karavas where Harry taught us how to forage for sea salt and to recognise, appreciating and understand the variables in producing high quality olive oil. It was a sensory experience that opened our eyes to new ideas, fresh perspectives and gave us a whole new appreciation for island life.
